3 Ingredient Black Bean Soup with Cotija Cheese

I have a super easy and healthy recipe for Black Bean Soup with Real California Cotija Cheese to share today! It’s only 3 ingredients and really good! And to celebrate Hispanic Heritage month I’m sharing some information on my favorite Mexican cheese – Cotija.

Cotija cheese is my favorite because it is salty and has a strong flavor without being pungent or overwhelming the other flavors of a dish. I love to eat it rolled up in a warm corn tortilla. So simple and delicious!

I’m Mexican-American so I’m super familiar with this crumbly cheese used as a topping for tacos or soup. And it’s very common in Mexican restaurants. But in case you haven’t used it at home… here’s some information on the taste, where it’s from and how to use it:

It is usually sold in small rounds in the cheese section of your local grocery store. Make sure to look for the Real California Milk seal when you buy it!

Okay – now let’s make some black bean soup!

This recipe is so simple it almost seems too easy, too good to be true… but it’s delicious!

The secret is to use a really good salsa. I love a medium salsa with roasted peppers or something with a lot of garlic. And after combining all the ingredients, taste and add more salsa or season with salt & pepper as needed.

Black Bean Soup Recipe with Cotija Cheese

Ingredients:

2 cans black beans (not drained)

2 cups salsa (roasted garlic works great)

1/2 cup Real California cotija cheese

optional: cilantro, avocado, tortilla chips

Directions: Combine beans and salsa in a sauce pot and heat thoroughly. Stir.

Serve topped with crumbled cotija cheese.

Optional – add avocado, cilantro and tortilla chips (or your favorite toppings).

Enjoy!

Run Bet Questions and Answers:

1. Can I use my Garmin Connect info on the treadmill? The treadmill I have is a little off with distance and pace.

RunBet:  For any treadmill photos, we do require the treadmill readout and the sweaty selfie.  They can try to use Garmin Connect on the treadmill, but we don’t recommend it as the GPS doesn’t always work indoors. And I’d hate to see someone try to use GarminConnect only to find out it didn’t track properly.

2. Can I walk on the treadmill for 30 min or has to be on the run?? 

RunBet: The player must meet the 18:00/mile pace requirement for this game.  The intention is to get people running and not point out that they can walk and still make the pace requirement.

3. Can I do the run in 2 parts to total 30 minutes for the day? Example – I run a 5K that day but finish in less than 30 minutes… Can I do a separate run to total 30 minutes for the day? 

RunBet: As per the Rules, “All runs must be tracked in one continuous session from start to finish.” So we do require the run to be done and completed in one session.

4. Can I do more than 1 run in a day? If I won’t have time to run 4 days… could I do 2 runs on 1 day? [Monica added – I’m assuming they’d chop it to start separate runs and NOT do 1 –  run for 60 minutes… but run 30 and start a new workout on their app?? ]

RunBet: Unfortunately, only one run a day can count towards the four runs/week requirement.

5. Can I do it from Canada? 

RunBet:  Anyone, anywhere can join and play.

6. Does Run Keeper count to track runs?

RunBet: Yes, RunKeeper and Strava will both work. 

7. I tried logging in using Facebook and got an error message… help?

RunBet: Please refer any person having problems with logging in to support@waybetter.com.  Our staff will be able to assist them, reset passwords, or do anything else they need to get logged in.

Light Hash Brown Casserole Recipe–an update to a classic

Hello! I have a delicious version of a classic recipe – Hash Brown Casserole to share today. I’m excited to have another potato packed recipe because they’re packed with so much goodness to fuel you up.

Potatoes are a great option for a non-processed carbohydrate that’s gluten free and very versatile. There are so many different types and ways to prepare them – from mashed to fries to potato lasagna – you can eat them as a base or a side to your meal.

Plus it’s a vegetable and has zero fat, sodium or cholesterol. Boom. But it’s also what they do have that makes them great – they’re packed with fiber, vitamin C, B6 and potassium – a skin on potato has more potassium than a banana. Depending on how you cook it – taters can be the base for a great low calorie fiber packed meal.

Light Hash-brown Casserole Recipe new healthy

This recipe is good for everyone – kids, adults, runners, eaters, your dog if it falls on the floor…

I tried it for the first time last year at Bible study and it was so good! A friend brought it to our potluck saying it was super easy to make! I asked her what was in it and she listed off potatoes…. butter… sour cream… cheese… sausage… and I immediately wanted to make it at home but – swap some of the ingredients to make lighter version of this dish.

So I simplified it and packed it with veggies. Done and delicious!

This lighter version of the classic hash brown casserole offers carbs – potatoes, protein – eggs, veggies – bell peppers and onions, cheese – dairy (and if you use sharp cheddar it’s packed with extra flavor).

Simple ingredients & super delicious!

Light Update on a Classic Breakfast Recipe

Ingredients:

  • 20oz. shredded potatoes
  • 6 eggs
  • 2 cups egg whites
  • 16oz frozen bell peppers and onions
  • 1 tsp. each: salt, pepper, garlic powder, dried parsley
  • 1.5 cups shredded cheddar cheese
  • optional: green onion for top

Directions: Heat oven to 350 degrees. Place bell pepper / onion mix in a microwave safe bowl and heat for a few minutes until room temperature, drain liquid.

Mix eggs and spices, add shredded potatoes and bell pepper mix. Combine and pour into a greased baking pan. Bake for 30 minutes (until almost set).

Top with cheese and continue baking until set (about 10 to 15 minutes).

Serve topped with green onion (and ketchup or hot sauce if that’s your thing).

How to Track your Miles:

All you need (for tracking runs outside) is a phone with GPS and one of the following free running apps which are available for iOS and Android: Runkeeper or Strava (in the future we’ll support other running apps). Once you have Runkeeper or Strava connected to RunBet, we “see” your runs and can automatically credit you. You just need to make sure the app is properly tracking your runs.

Note that if you run indoors on treadmills, you don’t need a run tracker – in that case, you can send photos of your treadmill along with sweaty selfies to our Referees to get credit for your runs.

Using your running watch:

RunBet supports Garmin GPS devices, so if you have one you will just need to make sure your runs are being saved in the Garmin Connect app. You can sync the Garmin Connect app with RunBet the same way you would sync Runkeeper or Strava.

You can use other wearable devices as well so long as they can connect to your Runkeeper or Strava accounts (which you can get for free).

Refer to Runkeeper for supported wearables here, and refer to Strava for supported wearables here.

Note that we can only credit runs that are officially reported through Runkeeper, Strava, or Garmin Connect. This is why it is important to make sure your wearable device is supported and that all your runs appear in one of the supported apps.

Cricket Chips–Trying Cricket Protein in Chips video

I’m eating chips with CRICKETS in them. Cricket protein powder is going to be the cool new thing – so um, here’s your head’s up to check it out and impress your friends. I unfortunately, don’t have friends… but I have you. And I’m trying to impress you by eating cricket chips so you have the full run down before you spend your money on them. Plus there are a lot of benefits to eating bug protein over beef protein. So it’s good for the environment. Boom.

Q: Would you eat crickets or cricket protein powder??

I spotted these Chirps Chips at Ralph’s – that’s just my local grocery store. They weren’t in a fancy bug section of the store either – just with the other chips.

The company is Chirps Chips – but there are a lot of new companies coming out with cricket protein powder and other bug protein snacks and foods soon.

The bag said one serving had the same amount of protein as one egg white.

They also have pea protein in them so that increases the protein factor too. Other than that the other nutrition stats seem to be similar to other chips –

A serving of Chirps Chips = 140 calories and 7g of fat.

A serving of Doritos = 150 calories and 8g of fat.

I put the 2 types of chips side by side here to compare.

They are fairly similar on some of the stats I look at first – calories, fat, fiber and protein. But the ingredients lists are very different. And it’s not just a numbers game when we’re thinking about health and the overall health benefits of the foods we eat. So it’s good to look at what’s in your food too.

These have 1 cricket per chip! So I probably had like 88 crickets!! (I ate most of the bag in the first sitting – they are good!)

I bought these at the grocery store but they’re also available on Amazon – Chirps Chips Variety Pack

And they have cookie mix with cricket protein and cricket protein powder.

I definitely want to try more from them because I’m so curious and if it also is better for the environment for us to transition to cricket or other bug protein… I’m okay with eating it in cookies and chips for sure!

New York City Marathon–Tips & Must See Course Highlights with Healthy Happier Bear Podcast

Today I’m talking with Ashley Diamond from My Healthy Happier Life – she’s run and spectated the New York City Marathon several times and she’s a New Yorker so she’s sharing the best tips on how to prep for the course, what you need to know for race morning plus tips for spectators.

I ran the race in 2013 but she’s the expert so we hit all the bases including – the one food you MUST eat while in NYC (spoiler: it’s NOT pizza!?). And most of the tips can help you prepare for any race – any distance! We get into timing your pre-run food and making friends and more!

Podcast Warm Up:

I ran the Revel Marathon Big Bear . And I’m talking to you … so I didn’t die.

But I did get a little sick right before the race and I did this interview with Ashley the day after so I’m a mouth breather and sound a lil congested. Gross. But if you run faster it sounds better … so speed up!

But let’s talk about how it really went down…

I realized I was getting sick on Thursday and tried to fight it off with sleep and vitamin C. But I had a fancy VIP trip to Disneyland planned for Friday and couldn’t bail on that. So… I got a lil sick. It was mostly mocos and mouth breathing.

Saturday… I got up early and bought new tires for my car because I was driving all the way to Redlands with my only friend and wanted her to be safe. And my brother told me it’s not smart to be driving on flat old tires so… yeah.

On the way there SR was hungry and I realized I hadn’t eaten lunch so we stopped at Chick Fil A around 4:30pm. This wasn’t the best pre-race meal but SR lives in Alaska where there’s no Chick Fil A and I live in a fantasy world without reason.

We got our bibs and went to my Nino and Nina’s house – they’re about an hour from me and were about 20 minutes from the shuttle bus pick up for the race.

Revel Big Bear starts up the mountain in Big Bear so you have to park and take a shuttle to the start line. It takes almost an hour to get to the start! So SR scared me because she kept worrying that she’d have to pee on the bus so she ducked out of line to pee somewhere and then I thought I should and might have peed on SR’s Boston Marathon poncho. And we’ll find out if she listens to the show if she tells me something about it. Boom.

Race – last week I set a few goals for myself, mostly because I felt like just saying – I’m running a marathon. K. Bye. – and leaving it at that was awkward.

My goals were:

A. Run a sub-4 hour marathon

B. Finish the marathon strong – run smart, pay attention to fuel and how I feel to learn from it

C. Finish.

D. Not die.

 

I hit my goal and ran it in 3:50:47. Pace 8:48.

Notes: I never really felt like I got in the zone. When you’re running 26 miles and aren’t going for a PR – I like to get to a pace where I feel like ‘I can do this all day’. [ How to Pace Yourself for a Marathon ]

I felt kinda meh the whole time. It felt like it took more effort than it should have given the paces I was running trying to keep it easy. There are a lot of reasons I didn’t feel 100% – my fitness level, the altitude or me being a lil under the weather or my nerves or crappy fueling or stomach … ?? But I am happy that despite not feeling great I did it!

I stopped at the restrooms 2x and took my time.

I wanted to walk the rest of the race around mile 19. I walked through the water station and had SR take some pics of me around that point.

I didn’t want to quit but I wanted to just walk it in the last 6 miles. But SR kept bugging me and we argued. And she was quiet for a bit and then started again and I got mad.

But I’m glad she pushed me because I am proud of how I did.

And I’m extra grateful she came out to run this race with me because I’ve registered for several marathons in the last year and a half and either stepped down to the half or back out all together of every single one.

I probably would’ve done that again – so SR deserves all the credit that I ran a whole marathon.

And I feel a lot better about myself and my abilities now. It’s not about the time – it’s that I didn’t think I could.

Elote Recipe–Easy Mexican Street Corn at Home

Hello! Today I’m recreating one of my favorite Mexican snacks or side dishes – Mexican Street Corn aka Elotes. It’s a super easy recipe you can make a little lighter than the original.  And I’m excited because even though I love it –  I’ve never made an authentic version at home!

If you’re not familiar Elotes = Mexican Street Corn = epic corn on the cob slathered with butter, mayo, cheese and chili. Sometimes you’ll see it served with cilantro, lime, cotija cheese or other toppings but the way I bought it growing up was mainly that combo.

Oh and – if you’re not familiar with elotes… you’re probably not familiar with the Elote Man aka the guy slinging this amazing snack! He would walk through the neighborhood pushing a cart and honking a horn to get customers attention. Inside the cart he’d have a huge pot of boiled corn and around it would be all the toppings: butter, mayo, cheese, chili, etc. When you bought an elote he’d use big metal tongs to grab a corn out of the water and stick a wooden stick in it. Then, he’d pile it up with all the toppings and hand it over dripping with all the delicious flavors melting together.

Today I made elotes at home and it was so good! This might be a new staple for me!

I was inspired by this Grilled Street Corn Recipe – but made a few swaps to make it a little lighter…

Instead of grilling – I boiled it in the bouillon. This made the entire corn cob extra juicy and flavorful.

Instead of sour cream – I used greek yogurt. This made it lower calorie but still creamy.

I used extra lime and cilantro because I love those flavors.

Mexican Street Corn – Elotes Recipe

Ingredients:

6 ears corn-on-the-cob

1 Knorr® Chicken flavor Bouillon cube

2 tsp. grated lime peel
2 Tbsp. fresh lime juice
1/2 cup chopped fresh cilantro
1/3 cup Hellmann’s® or Best Foods® Avocado Oil with a hint of Lime Mayonnaise Dressing
1/4 cup plain greek yogurt
1 Tbsp. ancho chili powder

Salt & Pepper

1 cup finely grated Cotija cheese

Directions:

Fill stock pot with water and 2 bouillon cubes – bring to boil. When it starts to boil add corn on the cob. Cook for 8-10 minutes.

While it’s boiling prepare the sauce…

Combine – mayo, greek yogurt, lime, lime peel, cilantro and chili in a bowl. Stir well. Add salt and pepper as needed to taste.

When corn is done – remove and pat dry. Spread sauce over corn and top with cotija cheese. Serve with extra lime and chili.

Revel Marathon–Big Bear Race Results and Recap

Hello! I ran the Revel Big Bear Marathon this weekend! I did a bunch of Instagram Stories on it – make sure you’re following @RunEatRepeat on IG for the updates!!

I hadn’t run a full marathon in a long time so I was stressed and unsure of how it would go. I wanted to have fun. I wanted to run well and get in a strong long run / marathon / mental exercise situation. And I think I did okay with all of those. I still have a very far way to go if I want to run faster, but I feel a lot more confident now! I’m confident I’m capable of running better and accomplishing hard goals. Now I just need to get specific with what those goals are and a plan to go after them. But today… I’m relaxing, eating and recapping my race…

5. I wanted to give up at mile 20… and I didn’t.

6. I made 2 bathroom stops during the race. And I wasn’t quick about it.
7. It wasn’t as cold as I thought it was going to be at the start. But we were prepared with throw away gear, ponchos, beanies and hot hands.

8. I wanted to give up at mile 22… and I did – – kinda… but kept moving forward.*****


I felt exhausted and wanted it to be over. I told SR I was done and didn’t care if I did a sub-4 hour marathon after all. I just wanted it to be over. She kept pushing me and encouraging me to suck it up and keep going. At the time I was made at her. We argued like an old married couple. But I kept my voice down (well, it was quiet for me at least). She kept on me trying different ways to motivate me…

SR: ‘don’t you think everyone wants it to be over? that’s not just you…’
Me: (silent anger)
//
SR: ‘do it for the insta’
Me: NO. I don’t care, you know I don’t care about that.
//
SR: ‘we’re almost done…’
Me: I was done miles ago! I don’t want to do this.
//
SR: ‘make it a time you can be proud of’
Me: I’m proud of just doing this! I don’t care about my time.
//
SR: ‘c’mon! we can do this!!…’
(another runner hears her try to motivate me and chimes in… )
Me: (gives SR a look because I’m not happy that now strangers are bugging me when I clearly am not interested in being motivated and would like to call an uber or an ambulance)
SR: ‘we have 20 more minutes. I think you can be uncomfortable for 20 more minutes…’
Me: (thinking bad words) puts in my headphones and starts to run

9. I FINISHED!!
Finish time: 3:50:46! I just wanted a sub-4 hour. And I’m happy with this extra because I really never got in the zone. I felt kinda tired and crappy the whole time. I’m not sure if that’s because of the elevation, my fitness level, me still fighting off being sick or a combination of all of those. But the point is – I did it. I’m back. I can still run 26.2 miles. I’m not as out of marathon shape as I thought.

10. It was gorgeous!! It’s a great course! The views were amazing!

We were so high that it looked like we were above the clouds at some points. And the sunrise views on the mountains – it was so so gorgeous!

We ran on a 2 lane road from Big Bear to Redlands – it’s not somewhere runners can run safely. So it was very special and I’m very grateful that we got to run here and see the mountains in a way most don’t get to enjoy! I really loved it!

It was a great race and I really miss running with SR so it was extra awesome. And now that I think about it… I don’t know if I would have done it if she didn’t come out to run the full! So again, she is nice and I hope she decides living off the grid in Gnome, AK is not that fun and moves back to run with me all the time.

Next post – I’ll talk about food! We ate a bunch of good stuff!! It probably wasn’t the best fuel but it was good!

*****Now that the race is over… I’m super grateful SR pushed me. At the time I was Done. I wasn’t going to quit but I just wanted to walk the last few miles. I felt like crap. But obviously I was able to push through it because I did. If she wasn’t there encouraging me to keep running – I would have walked a lot more! So, yeah she was right that I had more to give.
