Podcast–The Secret to Treadmill Running with RunEmz

DIY Microwave Popcorn in a Paper Bag

This. This!! This has changed my life. Yep. And this post might change your life too. Are you ready for it? I’m not trying to be dramatic… I just am dramatic, I don’t have to try. So keep that in mind as I teach you how to make popcorn in the microwave with just popcorn kernels and a paper bag.

And if you love popcorn as much as I do you’ll be super excited for this quick tip!

I LOVE popcorn. It’s definitely in my top 10 favorite foods. Is that weird? I feel like my favorite foods are a random mash-up of so many things! Anyway…

500 years ago I heard you could make microwave popcorn yourself super easy, cheap and fast by just putting your own kernels and seasoning in a paper bag. Boom!

Unfortunately, they didn’t have microwaves 500 years ago so no one really made this back then.

But I have a microwave and a love of popcorn so I finally decided to take advantage and figure out how to DIM (do it myself) popcorn super fast!

DIY Microwave Popcorn:

Ingredients: popcorn kernels , olive oil or coconut oil or butter – preferably in a spray, seasoning

Directions: Put 1/3 cup kernels in a paper bag. Fold bag over 2 times to close. Microwave for 2 to 3:30 minutes – paying very close attention to when the kernels slow down popping and it takes 5 to 10 seconds between pops.

When it’s done spray the popped corn with olive oil and season with whatever you like. You can spray it with olive oil and then add the seasoning straight to the bag and shake it around to mix or put it in a bowl.

Seasoning ideas: Salt, Pepper, Everything But the Bagel Seasoning, Sugar, Cinnamon, Chile Powder, Tajin, Cocoa Powder, Parmesan Cheese…

Note: I had to do this a couple of times to figure out exactly how long to microwave it so that the popcorn with mostly popped but not burnt. I burnt a few batches and had a few where only half popped. Finally I found the sweet spot is about 3 minutes for 1/3 cup – I have a small, not fancy microwave.

I’m obsessed with this right now and have used a bunch of different seasonings. This batch had Mexican seasoning – which sounds like it would taste like Mexicans but actually tastes a little like taco seasoning.

Question: Do you prefer salty or sweet popcorn?

I like salty! I eat more than enough sweet things and this is my salty pick!

10 K Training Plan for Lexus Lace Up Riverside

Hello! This weekend is the Lexus Lace Up Ventura Marathon / Half Marathon and 10k! Are you running it (or another race) this weekend?

If you feel motivated to show up to a 10K start line before the year ends – go for it! No excuses – because I’m sharing a 10K training plan that can get you there if you’ve been running regularly and can do about 3 – 4 miles right now.

I put together this beginner 10K training plan for a friend who wants to run the Lexus Lace Up Riverside 10K Dec 3rd. So you can use this plan for that race or another race that weekend.

It starts NOW (well, this weekend) and in 6 weeks you’ll be ready in time for the Lace Up Riverside 10K!

Note – this race is on a Sunday so the last week of the plan is the week before… and race day is noted on the Saturday before.

Fast Friday–The Easiest Way to Start Intuitive Eating

Here’s a quick podcast episode on how to listen to your body and fuel it well when you’re hungry. Eating when you’re hungry and stopping when you’re full is known as Intuitive Eating.

The concept is that your body will get to or stay at a healthy weight if you listen to your hungry and fullness cues. The obvious ‘cue’ is feeling hunger. But there are so many other ways our bodies tell us when it needs something.

Ways your body signals you it needs something… fatigue, irritability, stomach rumbling, unable to concentrate, mouth watering, dry mouth, stomach pains… and more. Your body might have signs that it’s thirsty or hungry or needs rest that are unique to you.

It’s very important to be self aware. On a deeper level that can be about relationships and goals… but today I’m just talking about physically knowing your body’s way of telling you it’s hungry or full.

This should be easy but as we get older we push those natural signals down and eat by ‘rules’. It could be the time of day you must eat to get to school or work on time or foods you’re allergic to or foods you avoid because they’re too fattening…

No matter the reason – it gets hard to listen to our bodies. Then – running makes it harder! We’re hungry! And thirsty! And follow blogs and instagram accounts with amazing food photos!

So the easiest way to start to get to a place of listening to your body is to ask yourself if you’re one of these 3 things throughout the day. The most important time to ask yourself is before you eat and after you’re done.

I feel… Good / Neutral / Bad right now.

That’s it.

Well, at least that’s it to start with. Get to a place where you know if you are feeling GOOD! or bad or kinda nothing. You can target this to your stomach if that’s where you feel hunger. But if you’re not sure take an overall assessment of how you feel. From there you can determine if you need food or a drink or rest or a breathe of fresh air… but it starts with these very simple categories.

Easy Chicken Tortilla Soup

Hello! I used to think that making soup at home was super difficult and would take forever. But this is a super easy chicken tortilla soup recipe. It tastes like it’s made from scratch and it kinda sorta is… but there are a few shortcuts that make it fast!

First – you need shredded chicken. You can shred a chicken breast you made at home, some rotisserie chicken or make chicken with salsa in the crockpot.

I used the salsa chicken I made this weekend during meal prep. When I was portioning everything out I put 1 cup of the shredded chicken in a big glass bowl and added the other ingredients. Then, I let it set overnight and heated it up the next day.

Chicken Tortilla Soup Recipe

  • 1 cup shredded chicken (cooked)
  • 1 can black beans
  • 1 jar salsa
  • 1 can chicken broth
  • 1 can of corn
  • corn tortillas OR chips
  • shredded cheese
  • optional:   cilantro / avocado

Directions: Combine chicken, beans, salsa, corn and broth – heat thoroughly. Place chips or tortillas (cut into strips) in a bowl. Serve soup over it. Top with shredded cheese, avocado, cilantro…

Is Ab Dolly the New Bosu Ball?

Hello! How’s it going? I’m not going to make any jokes today because my abs are sore. I’ve been testing out the Ab Dolly (and I have a discount code for you!) and it definitely was challenging at first. I’m getting the hang of it and have a bunch of great workout moves that you can do with it – and they aren’t just for your abs!

It was super easy to put together – just flip it over, pop the wheels in and start rolling. Done and done.

I’ve used ab roller type exercise equipment in the past AND I’ve used a bosu ball for ab work. So I know from experience that anything that really makes you use your abs and balance at the same time is a legit good way to really target your stomach. (And I knew I’d be sore!)

I wasn’t familiar with the Ab Dolly but it comes with a booklet of instructions with pictures and a DVD. I don’t have a DVD player but I checked out YouTube for workout ideas after I did a bunch of my own.

I started with the most common Ab Dolly move – knees on pad / forearms on dolly –> contract abs while going in and out. I’ve done similar moves on a bosu ball but there are so many more options with this because you can put your arms, hands, shins and feet on it.

My favorite move is to go from Plank to Pike. I don’t think this is the ‘real’ name for this – it’s just what I call it. I do this on the ground but on the Ab Dolly it’s takes it to a completely different level (and I love that). There are so many full body exercises you can do with it – sliding lunges and stretches and more.

My 6 Favorite Ab Dolly Workout Moves:

1. The OG forearms crunch

And you can take it up a level by going in a different direction – like toward your right shoulder and pulling back to center and repeating on the other side.

2. Pike to Plank…. I don’t have a picture of my pike so you’re going to have to trust me on this one. I usually do this going from downward dog to plank … back and forth for a minute. Doing this with the Ab Dolly was a lot more challenging.

3. The back stretch. I love this because as a runner my neck and shoulders can get tight from the repetition of arm swing and this was so nice. Ahhhhh.

4. Side lunge slide. This is great for lower body but also targets your core because you have to balance and use your abs to help pull back.

5. Reverse lunge. This is another great combination of workout plus balance exercise.

6. And when you have mastered the forearms on the Dolly move – you can put your shins on it. Then – you can take it up another level and place one hand farther away from you for a set and switch.

    Vegas is a Personal Trainer and Decorator

    Hello! How’s it going? Over here I have a top notch personal trainer / home decorator / sleepy roommate … helping me get it together. I call him “Vegas” and I pay him in turkey. 

    Last week I got the Ab Dolly to review for the blog. He’s a little new to the personal trainer biz so he mostly supervised. I did do some of his stretching moves though! I was super sore after the first few workouts with it.

    I was a meal prep machine this morning! I made oatmeal muffins and since the oven was on – I added sweet potatoes to bake them at the same time. Boom. And since I was in meal prep mode I made salsa chicken in the crockpot.
