1. Meb was at the RNR San Diego Party.

For those that don’t know – he’s one if the most decorated US marathon runners of his time. He won the silver medal at the 2004 Olympic games for the marathon. He finished 4th at the 2012 Olympics. And he won the 2009 New York City Marathon and 2014 Boston Marathon. Meb’s the first American male to win both of those races since the 80s. Amazing. And yet he’s so down to earth.

I’m listening to his book right now. So far I love it. He talks about every marathon he’s run and lessons from training, races, injuries, etc. He’s so relate-able and so much of what he says are things I believe and practice in my running. I’ve made a lot of notes so I’ll review it soon! Have you read it?

Meb’s new books is 26 Marathons : What I Learned from Faith, Identity, Running and Life from my Marathon Career. I’m listening to it on Audible… but there’s also actual book versions of it.

2. I asked Kristin (aka @stuftmama on Instagram) to be my date because she lives in the area.

Well, she’s also registered for the full marathon – I didn’t know until we were on the way.
Then, I talked to a few people running the race and… it made excited about it. I want to do it too! By the time we were driving home I decided I was in!!

3. So… I guess I’m running a marathon. Soon!!

The race is only 41 days away!! (Yes I counted. And that sound crazy close. Closer than saying 6 weeks…)

So early this morning I wrote a training plan that will hopefully get me ready in time. There’s no room for BS – I need to do every run, especially the long runs.

But I can do it. I want to do it. (I say that now… at mile 17 I’ll be singing a different tune.)

And she has a big doggo, 2 hairless cats, birds and an epic pantry of snacks. I wonder if she’ll let me & Diego move in…

PB and Chocolate Yogurt Snack for One Recipe

I couldn’t decide if this PB & Chocolate yogurt should be considered a snack or dessert. It’s so delicious, it tastes like Chocolate Peanut Butter Pie filling, but it’s packed with protein and healthy fats to help keep ya full and satisfied. So… I guess it can be considered a snack, dessert or anytime treat!!

Chocolate PB Yogurt snack recipe

PB & Chocolate Yogurt Snack for One

Ingredients:

6 oz. vanilla yogurt
1 Tb peanut butter
1 Tb chopped nuts
1 Tb dark chocolate shavings

Directions: If your PB is a lil hard to stir – soften it in the microwave for a few seconds.

Mix PB & Yogurt. Top with chocolate and nuts.

Enjoy!

This recipe can be used as a guide to create your own delicious treat! You can use your favorite Real California Milk vanilla or honey yogurt, switch PB out for almond butter, use milk or dark chocolate and top it with chopped peanuts. There are so many possibilities!

PB & Chocolate Yogurt Swaps:

Real California Milk Yogurt –> vanilla, honey yogurt or plain yogurt that you sweeten to your taste

Peanut Butter –> almond butter, cashew butter, walnut butter

Dark Chocolate Shavings –> mini chocolate chips, milk chocolate, cocoa nibs

Chopped almonds –> chopped nuts, granola, crunchy PB

I try to keep vanilla yogurt in the fridge all the time so I have an easy base for all my favorite yogurt creations. Remember to look for the Real California Milk seal when grocery shopping. The seal means it’s real food made with ingredients from California dairy farms. And 99% of those are family owned, which is really awesome!

Catalina Marathon Winner Podcast 107

Today I’m talking with the winner of the Catalina Marathon. If you’re not familiar – it’s a trail marathon on Catalina Island, just off the coast of southern California. It’s been called a bucket list race and named one of the most beautiful courses in the US by tons of runners.

I ran the race a while back and it’s GORGEOUS but it’s a very hard course. So I was so excited when I was just scrolling through instagram and saw that my real life friend won 1st place female. Amazing!! So we’re chatting about the race, her training and what’s next. I’ll share my race recap at the end of this post in case you’re here for some tips and info on the race.

The Boston Marathon weekend was nonstop! Here are 10 Best Parts from the first day of the weekend.

I didn’t run the race – I was there covering it with Hyland’s hosting ‘10,000 Miles to Boston’ – the video series following this year’s team training and race weekend. It was so much fun!! But it was PACKED so I wasn’t able to post a lot while I was there. But I’m super excited to finally share.

3-2-1 Grilled Cheese with Veggies

I think this might be the BEST grilled cheese I’ve ever had! (And I’ve had a lot of them.) I call it the 3-2-1 Grilled Cheese because 3 veggies with 2 kinds of Real California Milk cheese makes for 1 delicious sandwich.

Are you looking to Spring Clean your diet? Instead of cutting out certain foods or food groups … consider adding in ingredients that are good for you.


The idea is that you’ll crowd out some of the less than healthy foods you want to cut back on with better-for-you options for balanced consumption of nutrient-dense foods, from both plant-based and dairy sources. And this sandwich packs a lot of nutrients from both to help with that!

3 – 2 – 1 Grilled Cheese Sandwich

Ingredients:

4 slices whole wheat bread
6 slices Real California provolone cheese
1/2 cup Real California sharp cheddar cheese, grated
1 cup frozen broccoli
handful spinach
2 small tomatoes, sliced
Real California butter

3 2 1 grilled cheese

Directions: Directions: Place broccoli in a microwave safe dish and heat for 3 minutes or until warm. Add sharp cheddar cheese, salt & pepper – stir. Heat for 1 – 2 minutes or until cheese is melted. Mix thoroughly.

Heat non-stick pan on medium. Use stick of butter to grease pan.
Layer sandwich: bread – provolone cheese – spinach – tomatoes – broccoli cheese mix – provolone – bread

Cook sandwich…


Tip: Put a plate that’s about the size of the bread and smaller than the pan on top of sandwich. This will help it melt together, toast the bread and make it easier to flip.


When the first side is done, carefully flip it and cook the other side. Cook until cheese is melted and bread is toasted. Repeat with the other sandwich.

What are your favorite cookbooks?

I don’t really use cookbooks… but I love having them. I probably stick to the Food Network, magazines or Pinterest when I need inspiration for dinner ideas or other recipes. But I do have a few cookbooks handy at all times. They’re great coffee table books – so pretty!!

Freezing My Eggs–The Night Before Surgery

My egg freezing experience series. I’ve decided to freeze my eggs and I’m sharing every step of the process as I go through it. I started thinking about this over a year ago and kept going back and forth not sure if I should or shouldn’t go for it. After hearing something that pushed me to go for it I decided to move forward and now it feels like it’s happening so fast! I’m nervous and scared and overwhelmed.

This is the night before my egg retrieval! I’ve never had ‘real’ surgery before so I’m not sure what to expect. And I’m also not sure how many eggs I can get or really should get. I have a lot to share and catch up on!! But that’s coming soon. For now I wanted to share my thoughts in real time and I made a video just talking about how I’m feeling physically and mentally.
