This super easy vegetarian taco filling is made with egg whites, mushrooms and spices to make it a more dinner style taco. Bonus: This meatless (Mexican) meal comes together in 10 minutes. Boom.
I usually eat egg whites for breakfast after a run. Ideally, a post-workout meal should have a good mix of protein and carbs. Each serving of All Whites contains 5 grams of protein, 0 grams of fat and 25 calories.
If you workout in the evening this is a healthy dinner packed with protein from the egg whites. I made this for dinner but had the leftovers for breakfast so it works either way. But for some reason I think of breakfast tacos as being on soft tortillas – anyone else?
Spiced Mushroom and Egg White Tacos Recipe
Taco Filling Ingredients:
- 2 cups AllWhites 100% liquid egg whites
- 2 Tb. taco seasoning or Mexican seasoning
- 1/2 cup chopped onions
- 1 cup chopped mushrooms
- salt, pepper, garlic powder, hot sauce
To Build Taco:
- taco shells or tortillas
- shredded lettuce
- shredded cheese
- avocado
- sour cream
- salsa
I used this Mexican seasoning, but Taco Seasoning works too – just measure out the amount because some packets have more.
Directions: Pre-heat pan with 1 Tb. olive oil. Add onions and cook till translucent. Add chopped mushrooms. Season with garlic powder, salt & pepper. Cook till soft.
Mix 2 cups AllWhites 100% liquid egg whites and taco seasoning in a bowl. Add to pan with onions and mushrooms. Season with salt and pepper to taste. Cook through.
Serve in taco shells and top with your favorite taco toppings. Enjoy!
